What is Japanese mayonnaise all about? What differentiates it?
Well, first you will notice that it is hotter and sweeter than European mayonnaise. The texture is thicker and creamier in both color and texture.
Japanese mayonnaise has a rich egg flavor because only egg yolks are used compared to European mayonnaise which contains the whole egg. Also, Japanese mayonnaise is typically made with rice vinegar or apple cider vinegar, rather than distilled vinegar.
And just like any other Japanese creation, it scores on the umami factor, as it includes a small amount of MSG.
