Shibazuke is a tsukemono (Japanese preserves) of pickled cucumber and eggplant, ancient and typical of the Kyoto region. This recipe goes amazing with your rice or drinks and is an excellent probiotic, beneficial for your intestinal flora.

Simply put, it is Japanese-style pickled eggplant or cucumber, tinted with red Shiso (perilla frutescens) leaves. In fact, the Kanji of his name, 柴漬け, literally translate: "purple pickle", due to its characteristic purple color. In other words, it is a Cucumber or Eggplant Sunomono; that is, fermented with vinegar and salt. But different from Shiozuke (with salt only) or Nukazuke (with rice bran). It's also different from kyurizuke, another Shiso leafless cucumber tsukemono, with a different provenance, flavor, and fermentation than shibazuke.
