Yuba, also known as soybean skin or soybean cream, is a Chinese and Japanese food made from soybeans. During cooking of soymilk in a shallow pan, a film or skin composed mainly of protein-lipid complex forms forms on the surface of the liquid. Meat substitute By arranging and grouping the layers in a certain way, an imitation of a piece of chicken breast with skin can be obtained. The effect is completed by frying the "skin" side until crisp. It is stuffed with vegetables to obtain a tofu duck. It can also be used to make the vegan version of tripe. To eat it needs to be dehydrated, and then the yuba can be used in soups and stews as a main protein or to give it a different texture. Sauté the yuba with vegetables and seafood. Or slice it thin like noodles for a gluten-free pasta-like dish. What does Yuba taste like?

Like tofu, yuba does not have a strong flavor and tends to take on flavors depending on what you cook with it. You'll get nutty, slightly sweet undertones if you taste raw, but it's really the texture that stands out. If prepared correctly, it will be supple and soft, yet springy and slightly rubbery, almost like the outer skin of a burrata or a tight ball of mozzarella.
